Hemp Seed Date Cake

Pressure cook for 1 hour – cooked on a steamer upside down- in cake container on top – cover cake mix with three layers of cooking paper before you put lid on – three cups of water on bottom steamer on top of water upside down – cake on top.

2 cups dates in pot with 1 cup of strong tea with a block of 250grm salted butter put on heat when soft add 2 cups of brown sugar simmer until caramelized

When cool add

  • 4 beaten eggs with 2tsp van extract
  • Sift in 1/2 cup hemp seed or 2tbs of protein hemp seed powder
  • 3-1/2 cups self-raising flour or use 4 cups gluten free self raising flour
  • 2 -4 tsp cinnamon and 1tsp soda add to wet cool mix

Put in pressure cooker to steam then on low heat for one hour

Turn stove off and take pressure weight off only when pressure cooker cool when cake cool turn onto cake cooler

Serve with caramel sauce

  • Makes 7 cups
  • One block unsalted butter 250 grams
  • 2 cups brown sugar heat until caramelized add 1 bottle pure cream do not boil once added cream low heat or off add 3 tsp van paste it always tastes better the next day this cake
